Sap House Meadery opened in 2011, founded by cousins Matt Trahan and Ash Fishbein who both grew up in Ossipee, New Hampshire. That hometown connection is a big part of why they chose to build the business there—bringing something new to downtown while staying anchored to the community that raised them.

From Home Brewing to “Inventing” a Modern Mead Style

Like many small beverage businesses, Sap House started with experimentation: two guys home brewing beer, cider, and mead and asking, “What if this could be better—and more fun?”

At the time, mead had a reputation for being heavy, overly sweet, and high-alcohol, often tied to very traditional styles. Matt and Ash wanted to push past that stereotype by creating meads with fresh flavors, new formats, and a broader appeal—all while leaning into something that made sense for their region: local sourcing.

A key advantage? Mead ingredients are often easier to source locally than beer ingredients. Sap House works with the community to get honey, berries, and other local inputs, helping keep the product connected to place.

Signature Meads to Know

Sap House has built a lineup that ranges from dessert-style to light and crushable—helping redefine what people expect when they hear “mead.”

A few standouts include:

  • Sugar Maple — their first mead, made with honey and maple syrup, and known as a sweeter, dessert-style mead.
  • Raspberry Jam Session — one of their most popular offerings: canned, carbonated, lower-alcohol, and made with honey and raspberries.
  • Barrel-aged meads — including releases like The Trees, showcasing a deeper, more aged side of the category.

Matt’s take: once they got rolling, they weren’t just making a drink—they were helping build a new kind of mead category for modern tastes.

More Than a Tasting Room: “Dinner and a Show”

Sap House isn’t only about what’s in the glass—it’s also about what happens around it. At the Ossipee location, you’ll find an inviting setup for casual visits (think charcuterie boards and snacks), but their signature experience is their monthly event series:

  • “Dinner and a Show” (typically the third Thursday)
  • Fixed, three-course menu inspired by the musician
  • Limited seating (about 25–30 people)
  • Cocktail hour + mead tasting, followed by a live set (about an hour)

It’s part culinary event, part concert, and part community gathering—something that feels especially meaningful in a small town.

Two Locations, Growing Reach

Sap House now operates in Center Ossipee and also opened a second location in North Conway in 2025.

Beyond the tasting rooms, the brand has grown from a small local operation into a regional player with distribution across 6–7 states, reaching from Northern New England down to New York and New Jersey. They also ship, making it possible for fans to reorder even after they’ve left the area.

Even with that growth, Matt notes a familiar small-town business challenge: people still drive by and don’t always realize what’s inside. Part of the mission is simply helping more visitors—and locals—discover what Sap House is and what Ossipee has to offer.

Favorite Part of Ossipee

For Matt, Ossipee is personal—full of nostalgia and importance. Starting Sap House also changed how he sees community: it showed him that in a smaller, tighter-knit town, you can get involved and truly shape what happens.

He describes Sap House as a point of pride for downtown—and a reminder that local businesses can do more than sell a product. They can help create identity, energy, and momentum in the place they call home.
